This is a kind of long and complicated topic so let's start off with the bottom line.Trace mineral salt blocks are a safe and inexpensive way to ensure an adequate intake of most minerals except calcium and phosphorous. For maintenance purposes most grass forages contain adequate calcium and phosphorous. Salt blocks are often color coded depending on their make up and generally trace mineral blocks are a blue-grey or dark reddish-brown in color, iodized salt a lighter red, and plain salt white. However, the colors may vary, so don't rely on that alone, check the labels. The problem with providing a plain white salt block free choice is while there is a appetite for salt, there is not for the trace minerals so if the horse chooses the straight salt it does not get the very important trace minerals too.
