I have bought a paint mare who is mostly white. I am not a person usually interested in color, more in ability and size etc. So, I would like some tips as to caring for my white horse. She only has two color patches, her face is white as well as her back. I see some skin damage from last summer, her two blue eyes also seem sensitive(a little weepy). I keep my other horses on 24hr turn out with a run-in available and we also have shade trees. Is this an option for her or will she need to be stalled? We live in Alabama and it gets very hot/sunny here. Also, she is bred to a homozygous blk/wht stallion
that has alot more color than her, will her foal be mostly white too, or have more color? I don't think there's any way to predict that?

Though with one horse homozygous for the tobiano gene you are going to get color, you are right the nature of the amount of white is hard to predict.

A horse like you describe will have to be managed very aggresively to avoid long periods of direct sunlight and will most likley need to have the eyes protected continuosly from any direct sunlight. You will find a discussioin on sunlight irritation of the eyes at, Equine Diseases » Eye Diseases » Inflammed, Tearing, and Swollen Eyes. Run a search on "sunburn" and you will find many discussions and suggestions on this subject.
